That makes the fish or shrimp firm and also adds flavor. <a href=\"https:\/\/en.wikipedia.org\/wiki\/Ceviche\" target=\"_blank\" rel=\"noopener noreferrer\">Read here for more about Ceviche<\/a>.<\/p>\n<h2>How to make sure Shrimp Ceviche is safe to eat:<\/h2>\n<p style=\"text-align: justify;\">One important thing about making sure Ceviche is safe to consume is to be sure you&#8217;re keeping the shrimp well-chilled during the thawing, marinating, and preparation time. It also needs to stay cold when you serve it. We started with frozen shrimp, thawed it completely in the fridge, refrigerated it while the lime and lemon juice was &#8220;cooking&#8221; the shrimp, and ate it right away when it was done.<\/p>\n<h2>What inspired me to try making Shrimp Ceviche?<\/h2>\n<p style=\"text-align: justify;\">Making Ceviche was a bitter-sweet experience for me because I first tasted this years ago when it was made by my Bolivian friend Mary McBrier. Mary was killed far too young in an auto accident. Since that tragic event I&#8217;ve missed her so often and remembered the amazing Ceviche she made for special occasions. Then when <a href=\"https:\/\/kalynskitchen.com\/remembering-christmas-puerto-vallarta-oaxaca-things-im-thinking\/\">I went to Puerto Vallarta<\/a>, there was a restaurant at the resort that specialized in Ceviche. I ordered it over and over, thinking it couldn&#8217;t be too hard to make at home! And I&#8217;m sure glad I tried making it, I do love this so much.<\/p>\n<h2>How did I Make Shrimp Ceviche a Low-Carb Dish?<\/h2>\n<p style=\"text-align: justify;\">I did a lot of research comparing recipes online to create my own version of Shrimp Ceviche. I decided that there was no reason to add carbs with the orange juice many recipes used. And when we tested the recipe we loved the tart citrus flavors. You can add a pinch or two of sweetener to the finished Ceviche if you&#8217;d like a bit more sweetness, but we didn&#8217;t think it needed it. We also loved the crunch from the cucumber and red bell pepper, which made our Shrimp Ceviche more colorful and a bit more budget-friendly.<\/p>\n<h2>How low in carbs is this Easy Shrimp Ceviche Recipe?<\/h2>\n<p style=\"text-align: justify;\">This amazing recipe for Shrimp Ceviche has about 7.8 net carbs per serving. (We used <a href=\"https:\/\/kalynskitchen.com\/freezing-fresh-lemon-juice-and-lime\/\">fresh-frozen lime and lemon juice<\/a>.)<\/li>\n<li>Mix the chopped shrimp, diced red onion, and the lemon-lime mixture in a container with a snap-tight lid and put it in the refrigerator for 2-3 hours. (Our shrimp was probably done in two hours but we left it 3 hours, which may have intensified the flavor.)<\/li>\n<li>When the marinating shrimp is completely firm and has the appearance of cooked shrimp, keep it in the fridge but start chopping the red bell pepper, cucumber, and cilantro (or use thinly sliced green onion if you&#8217;re not a cilantro fan.)<\/li>\n<li>Combine those ingredients with chilled shrimp, taste to see if you want more salt, more <a href=\"https:\/\/amzn.to\/2NTjPcN\" target=\"_blank\" rel=\"noopener noreferrer\">Green Tabasco Sauce<\/a> (affiliate link), or a few pinches of sweetener.<\/li>\n<li>Serve right away. Start checking after 2 hours; it is done when the shrimp is completely firm and has the appearance of cooked shrimp.<\/li><li data-step-index=\"6\" id=\"mv_create_174_7\">Keep the \"cooked\" shrimp in the fridge while you chop the red bell pepper, cucumber, and cilantro (or green onion). Then remove shrimp from the fridge and add those ingredients. Taste to see if you might want a tiny bit more salt or hot sauce. Add a pinch or two of sweetener if you'd like it to be a little sweeter<\/li><li data-step-index=\"7\" id=\"mv_create_174_8\">Either serve right away or continue to chill until you're ready to serve.<\/li><li data-step-index=\"8\" id=\"mv_create_174_9\">Leftover Shrimp Ceviche will keep in the fridge overnight and is a delicious treat the next day!
