And for people who have vegetable gardens or get CSA vegetable deliveries, summer squash keeps showing up far into the fall. And that&#8217;s fine with me because so many of my <a href=\"https:\/\/kalynskitchen.com\/recipe-for-easy-cheesy-zucchini-bake\/\">favorite<\/a> <a href=\"https:\/\/kalynskitchen.com\/low-carb-zucchini-bake-feta-thyme\/\">zucchini<\/a> <a href=\"https:\/\/kalynskitchen.com\/roasted-balsamic-zucchini-and-mushrooms\/\">recipes<\/a> are cooked in the oven.<\/p>\n<p style=\"text-align: justify;\">And it&#8217;s prime roasted zucchini season, and for this recipe the addition of garlic (and of course Parmesan) really makes this a spectacular way to cook summer squash! If you haven&#8217;t tried roasted garlic, you&#8217;re going to love the way that roasting makes the garlic sweet and tender. And my niece <a href=\"http:\/\/www.kalynskitchen.com\/2015\/01\/meet-kara-and-things-im-thinking-about.html\">Kara<\/a> and I thought the addition of coarsely-grated Parmesan was a wow for this recipe, and the roasted summer squash was amazing with garlic and parmesan.<\/p>\n<p><!--more--><\/p>\n<p style=\"text-align: justify;\">Kara and I decided we might double the amount of garlic the next time we make it, so I&#8217;ll give you that option in the updated recipe. We used pre-peeled garlic cloves that came in a package, which made this quick to get into the oven and covering the baking sheet with foil made it easy to clean up. Cover a large baking sheet with foil.<\/li>\n<li>Wash the summer squash, cut off the ends, cut in half lengthwise (or not if your squash is small) and cut into slices about 3\/4 inch thick.<\/li>\n<li>Peel garlic if needed, and cut some of the bigger cloves in half. Cover a large baking sheet with foil.<\/li><li data-step-index=\"1\" id=\"mv_create_104_2\">Wash the squash, cut off both ends, and cut each piece of squash in half lengthwise (or not if your squash is small.) Cut the squash into slices about 3\/4 inch thick.<\/li><li data-step-index=\"2\" id=\"mv_create_104_3\">Peel garlic if needed, and cut some of the bigger cloves in half.
