Pork sausage will also be delicious in this recipe, and you might prefer that if you&#8217;re wanting it to be Keto. I love the spicy sausages, but for kids you might want to use Sweet Italian Sausage, which is flavorful but not spicy.&nbsp;<\/p>\n<h2>What cottage cheese do I use for Breakfast Casserole with Italian Sausage?<\/h2>\n<p style=\"text-align: justify;\">These days I love Good Culture Cottage Cheese which has slightly fewer carbs and more protein than most cottage cheese. I like to rinse the cottage cheese and drain, or just drain it in a colander to make it less watery. (Oops, I didn&#8217;t get a photo of that!)<\/li>\n<li>Rinse the cottage cheese in a fine-mesh colander and let it drain well.&nbsp;<\/li>\n<li>Beat eggs. My experience with egg bakes that have vegetables and meat in them tend not to get covered by the eggs very well and I could tell from the ingredients there was no way 10 eggs would do it. My sliced mushrooms were rather thick and took awhile to soften up. My casserole dish is pretty long too, so that doesn't help covering up all the ingredients.
