And she told me the salad idea was created by <a href=\"https:\/\/www.joanneweir.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Joanne Weir<\/a>, one of my favorite cookbook authors.<\/p>\n<p style=\"text-align: left;\">Now fast forward quite a few years and I can&#8217;t find this salad combination on either of those sites to credit them, but I&#8217;ve been adapting the salad and enjoying it for many years.<\/p>\n<p style=\"text-align: left;\">And my version has lots of vegetables and not much bulgur wheat, for a summer salad that&#8217;s pretty low in carbs, FTW! Since it&#8217;s a whole grain, bulgur is great for anyone who&#8217;s following the original South Beach Diet or other diets that emphasize eating whole foods. And in this salad the small amount of bulgur adds a nice chewiness without adding too many carbs.<\/p>\n<h2>How is this salad different from Tabbouleh?<\/h2>\n<p style=\"text-align: justify;\">This bulgur wheat salad has many ingredients found in <a href=\"https:\/\/kalynskitchen.com\/recipe-favorites-kalyns-tabbouleh-wi\/\">Tabbouleh<\/a>, but the amount of tomato and cucumber, the lemony dressing, and the addition of green onion gives this salad a slightly different attitude. Or if you use the JUMP TO RECIPE link at the top of the page, it will take you directly to the complete recipe.)<\/p>\n<ol>\n<li>The recipe directions said to soak the bulgur in boiling water for 30 minutes.<\/li>\n<li>Here&#8217;s how it looked when I first added the water.<\/li>\n<li>After 30 minutes, the bulgur had absorbed most of the water, but if I tipped the bowl, there was still quite a bit of water in the bottom. I wasn&#8217;t in a hurry, so I let it soak about 45 minutes more.<\/li>\n<li>You could probably just drain off the extra water if you&#8217;re in a hurry, but I soaked my bulgur about 80 minutes, and after that much time it was nicely fluffy. Bulgur can be a bit chewy for some people, so I think a little extra soaking is good if you have time.<\/li>\n<li>I whisked together the lemon zest, lemon juice, minced garlic, and olive oil, and stirred it into the bulgur, then let it sit while I chopped the herbs and vegetables.<\/li>\n<li>After the bulgur has hung around with the dressing for about 20 minutes, stir in the chopped mint, parsley, and green onions.<\/li>\n<li>I used cherry tomatoes, which I thought held together very well in this salad, but you could also use chopped whole tomatoes.<\/li>\n<li>With the tomatoes and cucumbers I was going for the symmetry of cut (same-sized pieces) that I&#8217;m sometimes so picky about!<\/li>\n<li>Here&#8217;s the finished salad with the tomatoes and cucumbers gently stirred in. mv-create-title-secondary\">Instructions<\/h3>\n\t\t<ol>\r\n \t<li data-step-index=\"0\" id=\"mv_create_692_1\">Measure out 1 cup bulgur into a bowl big enough to hold the finished salad.<\/li>\r\n \t<li data-step-index=\"1\" id=\"mv_create_692_2\">Add 1 cup boiling water, stir, and let bulgur soak until all the water is absorbed. (The recipe said 30 minutes, but I soaked the bulgur about 80 minutes, which made it nice and fluffy.)<\/li>\r\n \t<li data-step-index=\"2\" id=\"mv_create_692_3\">While bulgur soaks, zest one lemon and put zest into a small bowl.<\/li>\r\n \t<li data-step-index=\"3\" id=\"mv_create_692_4\">Squeeze <a href=\"https:\/\/kalynskitchen.com\/freezing-fresh-lemon-juice-and-lime\/\">lemon juice<\/a> into bowl, adding more if needed to make 3 T lemon juice.<\/li>\r\n \t<li data-step-index=\"4\" id=\"mv_create_692_5\">Add finely minced garlic, then whisk in 3 T olive oil.<\/li>\r\n \t<li data-step-index=\"5\" id=\"mv_create_692_6\">When bulgur has absorbed all the water, stir in this dressing and let marinate while you chop herbs and veggies.<\/li>\r\n \t<li data-step-index=\"6\" id=\"mv_create_692_7\">Wash parsley and mint and spin dry or dry with paper towels.<\/li>\r\n \t<li data-step-index=\"7\" id=\"mv_create_692_8\">Chop herbs and slice green onions and stir into bulgur.<\/li>\r\n \t<li data-step-index=\"8\" id=\"mv_create_692_9\">Peel cucumbers and remove seeds if the seeds are big. (I had garden cucumbers, so I left the seeds in.)<\/li>\r\n \t<li data-step-index=\"9\" id=\"mv_create_692_10\">Dice cucumbers and tomatoes into pieces about 1\/2 inch, then gently stir into salad.<\/li>\r\n \t<li data-step-index=\"10\" id=\"mv_create_692_11\">Season to taste with salt and fresh ground black pepper and serve.<\/li>\r\n<\/ol>\t<\/div>\n\t<div class=\"mv-create-notes mv-create-notes-slot-v2\">\n\t\t<h3 class=\"mv-create-notes-title mv-create-title-secondary\">Notes<\/h3>\n\t\t<div class=\"mv-create-notes-content\">\n\t\t\t<p><p>I used curly parsley, but either type will work.<\/p><p>Even though tomatoes should never be refrigerated, I was surprised that this was still quite good after it had been in the fridge overnight.
