Even though the recipe isn&#8217;t much in the looks department, I hope you won&#8217;t let that stop you from making it. And St. Patrick&#8217;s Day is next week, so I&#8217;m reminding you about this favorite Irish dish for my <a href=\"https:\/\/kalynskitchen.com\/category\/recipes\/friday-favorites\/\">Friday Favorites<\/a> pick!<\/p>\n<p style=\"text-align: justify;\">Years ago I made this <a href=\"https:\/\/kalynskitchen.com\/pureed-cauliflower-with-garlic\/\">Pureed Cauliflower recipe<\/a> and realized that mashed cauliflower is pretty delicious. Shortly after that I first made <a href=\"https:\/\/kalynsprintablerecipes.blogspot.com\/2010\/04\/pureed-cauliflower-and-cabbage-with.html\" target=\"_blank\" rel=\"noopener\">mashed cauliflower with cabbage and green onions<\/a> for a blogging event. (See the original printer-friendly version at that link.) And then that recipe hung around in the archives for years before I finally managed improve the horrible photos.<\/p>\n<p style=\"text-align: justify;\">And what inspired me to give this recipe a make-over was the discovery that Colcannon sometimes has bacon! I couldn&#8217;t imagine why bacon wouldn&#8217;t be a delicious addition to this dish! And we also improved the recipe by cooking the cabbage and cauliflower separately and then combining them at the end so it&#8217;s quicker to make! This recipe is a tasty low-carb Colcannon Recipe that&#8217;s kicked up with the addition of bacon!<\/p>\n<h2>How low in carbs is the Colcannon with Bacon?<\/h2>\n<p style=\"text-align: justify;\">This low-carb version of an Irish classic made with cauliflower instead of potatoes has only 8 net carbs per serving and 9 grams of protein!<\/p>\n<h2>Can you make low-carb Colcannon without bacon?<\/h2>\n<p style=\"text-align: justify;\">The bacon is 100% optional in this recipe! If you&#8217;re not a bacon fan or just prefer a more classic version of Colcannon, leave out the bacon and use two tablespoons of butter to fry the cabbage. Reserve 1 T bacon grease and discard the rest.&nbsp;<\/li>\n<li>Chop cabbage while the bacon cooks.<\/li>\n<li>Heat bacon grease and 1 tablespoon butter, add cabbage and cook about 10 minutes, or until it&#8217;s barely starting to brown.<\/li>\n<li>While cabbage cooks, slice green onions.<\/li>\n<li>Add green onion to the cabbage and cook about 5 minutes more.<\/li>\n<li>When the cauliflower is soft, drain well in a colander.<\/li>\n<li>Add bacon to cabbage mixture and turn heat to low.<\/li>\n<li>Put cauliflower back into the pot, add 2 tablespoons butter, and mash with a potato masher. (We didn't wipe out the pan but you can if you feel it needs it.)<\/li><li data-step-index=\"5\" id=\"mv_create_968_6\">While bacon cooks, chop up enough cabbage to make about 5 cups chop chopped cabbage.<\/li><li data-step-index=\"6\" id=\"mv_create_968_7\">Heat the reserved bacon grease and 1 tablespoon butter over medium heat, add chopped cabbage, and cook about 10 minutes, or until cabbage is barely starting to brown.<\/li><li data-step-index=\"7\" id=\"mv_create_968_8\">While cabbage cooks, slice green onions.<\/li><li data-step-index=\"8\" id=\"mv_create_968_9\">When cabbage is starting to barely brown, add green onion to the pan with the cabbage and cook about 5 minutes more.<\/li><li data-step-index=\"9\" id=\"mv_create_968_10\">When the cauliflower is soft, drain it well in a colander placed in the sink.<\/li><li data-step-index=\"10\" id=\"mv_create_968_11\">Add the bacon to the frying pan and turn heat to low.<\/li><li data-step-index=\"11\" id=\"mv_create_968_12\">Put cauliflower back into the pot you cooked it in, add 2 tablespoons butter, and mash well with a potato masher.
