But I do have a few cookies I like to make for the holidays, we liked the updated version of these cookies made slivered almonds, unsweetened coconut, and Monkfruit Sweetener.<\/p>\n<p style=\"text-align: justify;\">I&#8217;m excited to share this recipe for anyone who&#8217;s making cookies during the holidays. They&#8217;re not to be confused with the French cookie called <a href=\"http:\/\/barbarabakes.com\/2010\/09\/candy-corn-macaron-for-mactweets\/\">macarons<\/a>, which are a whole different baking experience!<\/p>\n<h2>Which Monkfruit Sweetener did I use for Sugar-Free Macaroons?<\/h2>\n<p style=\"text-align: justify;\">I made these Sugar-Free Coconut Macaroons with Golden Monkfruit sweetener. But you can definitely use Classic Monkfruit which I sometimes think dissolves a bit better in recipes where there&#8217;s not much liquid. If you&#8217;re not familiar with Monkfruit, you can <a href=\"https:\/\/kalynskitchen.com\/monkfruit-zero-calorie-sweetener\/\">read about Lakanto Monkfruit and why I like it<\/a>.<\/p>\n<h2>How low in carbs are the Sugar-Free Coconut Macaroons?<\/h2>\n<p style=\"text-align: justify;\">This cookie recipes uses unsweetened coconut but it&#8217;s sweetened with <a href=\"https:\/\/amzn.to\/2Z9TVn9\" rel=\"noopener\">Monkfruit Sweetener<\/a> (affiliate link) and the coconut has so little sugar I think this can be considered a sugar-free cookie. I would use <a href=\"https:\/\/amzn.to\/2UaD5Ds\" target=\"_blank\" rel=\"noopener noreferrer\">parchment paper sheets<\/a> (affiliate link) or a <a href=\"https:\/\/amzn.to\/3BjJQgE\" target=\"_blank\" rel=\"noopener\">silicone baking mat<\/a> (affiliate link) on the cookie sheet.<\/li>\n<li>Process slivered almonds in a <a href=\"https:\/\/amzn.to\/2SQTtbp\" target=\"_blank\" rel=\"noopener noreferrer\">Food Processor<\/a> (affiliate link) until partly ground.&nbsp;<\/li>\n<li>Put ground almonds, shredded unsweetened coconut, and Monkfruit Sweetener into a bowl with generous pinch of salt.<\/li>\n<li>I love using an <a href=\"https:\/\/amzn.to\/2IzELPP\" target=\"_blank\" rel=\"noopener noreferrer\">egg separator<\/a> (affiliate link) to separate the egg whites from the yolks, but you can also do it by hand using the shell.&nbsp;<\/li>\n<li>Mix in egg whites, plain Greek yogurt, and vanilla.<\/li>\n<li>Scoop out mixture with a tablespoon and roll into small balls, then use a fork to smash down. small food processor or the bowl attachment for an immersion blender to chop the almonds, just until they are starting to get ground but are still a little chunky.<\/li><li data-step-index=\"3\" id=\"mv_create_229_4\">Put the ground almonds, shredded coconut, sweetener, and salt into a medium-sized bowl and mix together with a spoon.<\/li><li data-step-index=\"4\" id=\"mv_create_229_5\">Separate 2 eggs to get 2 egg whites.\u00a0 (Save the yolks for something else or discard.)<\/li><li data-step-index=\"5\" id=\"mv_create_229_6\">Add egg whites, plain Greek yogurt, and vanilla to the dry mixture and blend together with a spoon until the ingredients are well-combined.<\/li><li data-step-index=\"6\" id=\"mv_create_229_7\">Scoop out dough one tablespoon at a time and form into a round ball, then place on the baking sheet about 2 inches apart.\u00a0 (I used a metal tablespoon, which worked well.)<\/li><li data-step-index=\"7\" id=\"mv_create_229_8\">Use a fork to press each ball down into a cookie slightly less than 1\/2 inch thick.\u00a0 (The cookies don\u2019t spread out much, so don\u2019t worry about that.)\u00a0 I also used the fork to press the edges together because the batter is rather crumbly.<\/li><li data-step-index=\"8\" id=\"mv_create_229_9\">Bake cookies until they are well set and starting to get nicely brown on the edges, about
