One year I even planted TWO Green Zebra tomato plants so I can make plenty of recipes with this favorite tomato!<\/p>\n<p style=\"text-align: justify;\">But you can make this tasty soup with any variety of tomato that stays green or yellow when it&#8217;s ripe, and this soup is a perfect way to cool off when the weather is just too HOT!<\/p>\n<p style=\"text-align: justify;\">I loved this Green Gazpacho when I first made it, and I think I&#8217;ve made it almost every summer since then! Green Zebra is a tomato variety that&#8217;s green with golden stripes when it&#8217;s ripe, and it&#8217;s a bit more tangy in flavor than some tomato varieties. Wikipedia says there is some controversy about <a href=\"https:\/\/en.wikipedia.org\/wiki\/Green_Zebra\" target=\"_blank\" rel=\"noopener noreferrer\">whether Green Zebras are an heirloom tomato<\/a>, but I don&#8217;t care about that, I just think they&#8217;re delicious!<\/p>\n<h2>What is Green Gazpacho?<\/h2>\n<p style=\"text-align: justify;\">If you&#8217;ve never had the chilled tomato soup that comes from Spain called <a href=\"http:\/\/en.wikipedia.org\/wiki\/Gazpacho\">Gazpacho<\/a>, you may be skeptical about whether a soup like this can really be that good. I know I was, but when <a href=\"https:\/\/kalynskitchen.com\/2006\/08\/gazpacho-cooking-with-friends.html\">I first tried Gazapacho with some of my blogging friends<\/a>, I was really blown away by how delicious it was. And now I&#8217;ve had Gazpacho in Spain where it was even more amazing! Green Gazpacho is simply a variety of Gazpacho made with tomatoes that are green or yellow when they&#8217;re ripe.<\/p>\n<h2>Can you make Green Gazpacho without Green Zebra Tomatoes?<\/h2>\n<p style=\"text-align: justify;\">You might find Green Zebras at the Farmers Market if you&#8217;re not growing your own. But if you don&#8217;t have this type of green tomato you can make this chilled soup with any type of flavorful tomato that&#8217;s green or yellow when it&#8217;s ripe. The recipe has green pepper, so it will still be green even if you use yellow tomatoes.<\/p>\n<h2>How do I make Gazpacho that&#8217;s low-carb and gluten-Free?<\/h2>\n<p style=\"text-align: justify;\">Traditional Gazpacho has bread, but I make mine without any bread to make it lower in carbs and gluten-free. Use tomatoes at the peak of ripeness to make this soup if you can!<\/li>\n<li>Chop up one large cucumber and a green bell pepper.<\/li>\n<li>Put the minced fresh garlic, lemon juice, bell pepper, and cucumber into the food processor and process until it&#8217;s mostly chopped.<\/li>\n<li>I used six Green Zebra Tomatoes for this, but you could use any type of green or yellow tomatoes. (If you only have red tomatoes, I&#8217;d probably make <a href=\"https:\/\/kalynskitchen.com\/2006\/08\/gazpacho-cooking-with-friends.html\">this Gazpacho<\/a> instead.)<\/li>\n<li>I chopped up the tomatoes and dug two avocados out of the fridge. (They were a little past their prime, which didn&#8217;t matter at all in a soup like this!)<\/li>\n<li>Add the chopped tomatoes and the scooped out avocado to the food processor and continue to process until it&#8217;s a finely blended as&nbsp; you&#8217;d like. (I like it just a little chunky, but mostly liquid.)<\/li>\n<li>Add the <a href=\"https:\/\/amzn.to\/2NTjPcN\" target=\"_blank\" rel=\"noopener noreferrer\">Green Tabasco Sauce<\/a> (affiliate link) and sea salt and process for a few seconds. Then taste the Gazpacho to see if you&#8217;d like it a bit saltier or spicier. Remove seeds from green bell pepper and coarsely chop. Chop cucumbers.<\/li><li data-step-index=\"1\" id=\"mv_create_615_2\">Put garlic, lemon juice, green bell pepper, and cucumber into food processor fitted with steel blade and process until the mixture is mostly chopped.\u00a0 (This will take a minute or two.)<\/li><li data-step-index=\"2\" id=\"mv_create_615_3\">While the mixture chops, cut up tomatoes and cut avocados in half and remove the seeds.<\/li><li data-step-index=\"3\" id=\"mv_create_615_4\">When you think peppers and cucumbers are chopped enough add the diced tomatoes and scooped-out avocado flesh to the food processor and process about 1 minute more, or until the mixture is as finely blended as you\u2019d like it. (I like it slightly chunky.)<\/li><li data-step-index=\"4\" id=\"mv_create_615_5\">Add the sea salt and <a href=\"https:\/\/amzn.to\/2NTjPcN\">Green Tabasco Sauce<\/a> (affiliate link), starting with about 1 tsp. of each and blending for a few seconds, then tasting to see if it is salty and spicy enough for you.
