And when I spotted this idea, I couldn&#8217;t get it out of my mind.<\/p>\n<p style=\"text-align: justify;\">Of course I had to put my own spin on it. I increased the ratio of avocado to Brussels Sprouts, because this is a recipe to make for a special occasion. I also changed the preparation method quite a bit to make this a Thanksgiving-friendly dish. For my version you can cook the Brussels Sprouts in a very hot oven after you take out the turkey.<\/p>\n<p style=\"text-align: justify;\">For anyone who likes Brussels Sprouts, avocado, and pecans, this recipe is a must-try! Put the nuts on a cutting board to cool.<\/li>\n<li>Trim the stem end of the Brussels sprouts and cut them into half, or quarters if they&#8217;re large. (If you need to wash them, be sure to spin until they&#8217;re very dry. If you can do this early and let them air dry for an hour or so, that would be best.)<\/li>\n<li>Whisk together balsamic vinegar, lemon juice, and olive oil and toss the Brussels sprouts with that mixture.<\/li>\n<li>Spray the baking sheet with non-stick spray, spread out the Brussels sprouts, and roast for 10 minutes.<\/li>\n<li>After 10 minutes, use a turner to flip the Brussels Sprouts, trying to get most of them turned over. (Some leaves that fall off may be overly done. We just picked those off and ate them at this point!)<\/li>\n<li>Roast 5-10 minutes longer, or until they&#8217;re nicely browned. Be sure to watch them for this second roasting.<\/li>\n<li>While Brussels Sprouts cook, coarsely chop the pecans.<\/li>\n<li>Peel and dice the avocado and toss with 2-3 teaspoons of lemon juice.<\/li>\n<li>Toss Brussels sprouts with the avocado, season to taste with salt and fresh ground black pepper, arrange on serving dish, and sprinkle over pecans. temperature.<\/li><li data-step-index=\"1\" id=\"mv_create_1031_2\">Put pecans on the baking sheet you\u2019ll be using to roast the Brussels sprouts, and when the oven is hot put the baking sheet in and roast 3-4 minutes or just until the pecans barely start to look browned.<\/li><li data-step-index=\"2\" id=\"mv_create_1031_3\">Remove from oven and put the pecans on a cutting board to cool.<\/li><li data-step-index=\"3\" id=\"mv_create_1031_4\">Trim the stem ends of Brussels sprouts and cut them in half, or in quarters if they\u2019re large.<\/li><li data-step-index=\"4\" id=\"mv_create_1031_5\">Most Brussels sprouts don\u2019t need to be washed but if they do need it, use a salad spinner and spin them very dry or they won\u2019t roast properly.\u00a0 (If you can wash earlier in the day and let them air dry, that would be ideal.)<\/li><li data-step-index=\"5\" id=\"mv_create_1031_6\">Whisk together the balsamic vinegar, 1 teaspoon lemon juice, and olive oil.\u00a0 Put Brussels sprouts into a bowl and toss with the balsamic mixture.<\/li><li data-step-index=\"6\" id=\"mv_create_1031_7\">Spray the baking sheet with non-stick spray and spread the Brussels sprouts out. (You can pick off the leaves that fall off if you prefer; some of them will get too done in the hot oven.)<\/li><li data-step-index=\"7\" id=\"mv_create_1031_8\">Roast Brussels sprouts 10 minutes.<\/li><li data-step-index=\"8\" id=\"mv_create_1031_9\">While the Brussels sprouts roast, coarsely chop the pecans.<\/li><li data-step-index=\"9\" id=\"mv_create_1031_10\">Peel the avocados and cut them into small pieces.<\/li><li data-step-index=\"10\" id=\"mv_create_1031_11\">Wash out the bowl you tossed the Brussels sprouts in, put the avocado into the bowl, toss with the 2 teaspoons lemon juice, and season with 1\/2 teaspoon\u00a0 salt and some fresh-ground black pepper.<\/li><li data-step-index=\"11\" id=\"mv_create_1031_12\">After 10 minutes, remove baking sheet from the oven and quickly use a turner to turn the Brussels sprouts over (they don\u2019t all have to be turned over; just turn as many as you can do quickly.)<\/li><li data-step-index=\"12\" id=\"mv_create_1031_13\">Put the baking sheet back in the oven and roast the Brussels sprouts  5-10 minutes more (or until they\u2019re nicely browned, I would check after 5 minutes.)<\/li><li data-step-index=\"13\" id=\"mv_create_1031_14\">Gently toss the hot Brussels sprouts with the avocado.<\/li><li data-step-index=\"14\" id=\"mv_create_1031_15\">Season to taste with a little more or salt and fresh-ground black pepper, to taste.<\/li><li data-step-index=\"15\" id=\"mv_create_1031_16\">Arrange the Brussels Sprouts and Avocado on a serving dish, sprinkle pecans over, and serve immediately.<\/li><\/ol>\t<\/div>\n\t<div class=\"mv-create-notes mv-create-notes-slot-v2\">\n\t\t<h3 class=\"mv-create-notes-title mv-create-title-secondary\">Notes<\/h3>\n\t\t<div class=\"mv-create-notes-content\">\n\t\t\t<p><p>If you have a large bag of Brussels Sprouts you can use a bit more than a pound for this recipe.
