But you can certainly get by with less bacon, and discard the bacon grease and make the salad with olive oil if that sounds better to you. And if you want this to be a vegetarian salad, the slivered almonds and Parmesan add lots of flavor!<\/p>\n<h2>Can you use more bacon in this Brussels Sprouts Salad?<\/h2>\n<p style=\"text-align: justify;\">I kind of wanted to call the recipe Brussels Sprouts Salad with BACON, because the bacon gives the salad so much good flavor! So feel free to use even more bacon if you&#8217;d like!<\/p>\n<h2>What do raw Brussels Sprouts taste like?<\/h2>\n<p style=\"text-align: justify;\">I never liked boiled Brussels Sprouts when I was a kid, but now I&#8217;m a huge fan of <a href=\"https:\/\/kalynskitchen.com\/roasted-brussels-sprouts-recipe-with\/\">roasted Brussels Sprouts<\/a> and raw Brussels Sprouts. I think the raw Brussels Sprouts have a slightly nutty flavor, a bit similar to the flavor of raw cabbage but milder.<\/p>\n<h2>Can you use a food processor to cut up the Brussels Sprouts?<\/h2>\n<p style=\"text-align: justify;\">When I shared <a href=\"https:\/\/kalynskitchen.com\/recipe-for-shredded-and-roasted\/\">Roasted Shredded Brussels Sprouts<\/a> I recommended cutting up the Brussels Sprouts by hand, and showed you a photo of how I do it. And you can certainly do that for this recipe as well. But in a salad I don&#8217;t mind the more uneven texture you get from using the food processor, so take your choice on that!<\/p>\n<h2>How low in carbs is the Brussels Sprouts Salad?<\/h2>\n<p style=\"text-align: justify;\">The low-carb version of shaved Brussels Sprouts salad shown in these photos has only 5.5 net carbs and 9 grams of protein! Even if you toss in some dried cranberries for a holiday version, this will be a pretty low-carb salad! Or if you use the <strong>JUMP TO RECIPE<\/strong> link at the top of the page, it will take you directly to the complete recipe.)<\/p>\n<ol>\n<li>I bought Brussels Sprouts that were already well-trimmed and just had to cut them in half, trim the Brussels Sprouts if needed.<\/li>\n<li>Use the slicing blade of a <a href=\"https:\/\/amzn.to\/43HGBKT\" target=\"_blank\" rel=\"noopener\">Food Processo<\/a>r (affiliate link), a <a href=\"https:\/\/amzn.to\/354ljYa\" target=\"_blank\" rel=\"noopener noreferrer\">mandoline slicer<\/a> (affiliate link) or just a sharp knife to slice the Brussels Sprouts.<\/li>\n<li>Measure out the almonds, then toast almonds in a dry pan until they&#8217;re fragrant, about 2 minutes.<\/li>\n<li>Cook the bacon until it&#8217;s crisp, remove from pan and drain on paper towels, keeping the bacon grease in the pan.<\/li>\n<li>Whisk together 2 tablespoons of bacon grease, olive oil, lemon juice, Dijon, red wine vinegar, and maple syrup to make the dressing. Use <a href=\"https:\/\/amzn.to\/33Zqt63\" target=\"_blank\" rel=\"noopener noreferrer\">Sugar-Free Maple Syrup<\/a> (affiliate link) for lowest carbs.<\/li>\n<li>Remove the rest of the bacon grease from the pan, then put the dressing into the pan you cooked the bacon in and heat until it&#8217;s starting to bubble.<\/li>\n<li>Then toss the hot dressing with the raw Brussels Sprouts and mix in the bacon, toasted almonds, and Parmesan.<\/li>\n<li>Season to taste with salt and fresh-ground black pepper.<\/li>\n<li>Enjoy!
