If you&#8217;re a fan of the <a href=\"http:\/\/en.wikipedia.org\/wiki\/Reuben_sandwich\">Reuben Sandwich<\/a>, you&#8217;ll recognize that&#8217;s how this casserole got its name. This is a recipe I came up with several years ago after I saw a Reuben casserole on Pinterest and experimented to make it into a low carb dish.<\/p>\n<p style=\"text-align: justify;\">It took a couple of tries to get the recipe and photos the way I wanted them. This recipe is a complete winner for using leftover corned beef, and tomorrow is St. Patrick&#8217;s Day! I haven&#8217;t managed to have any left over to try freezing it, but I am guessing it should freeze well.<\/p>\n<h2>What Thousand Island Dressing is low in carbs for this recipe?<\/h2>\n<p style=\"text-align: justify;\">When I first made this recipe I had a hard time finding Thousand Island Dressing that was really low in carbs. But now I&#8217;d use <a href=\"https:\/\/amzn.to\/3msvVgi\" target=\"_blank\" rel=\"noopener\">G. Or if you use the <strong>JUMP TO RECIPE<\/strong> link at the top of the page, it will take you directly to the complete recipe.)<\/p>\n<ol>\n<li>Chop up a head of cauliflower and cook in boiling salted water.<\/li>\n<li>Drain cauliflower well, then use an <a href=\"https:\/\/amzn.to\/2OvI6Tf\" target=\"_blank\" rel=\"noopener noreferrer\">Immersion Blender<\/a> (affiliate link) or hand beater to puree the cauliflower with the sour cream.<\/li>\n<li>Stir in grated Swiss cheese and green onions.<\/li>\n<li>Slice up cabbage, shred corned beef apart and chop, and measure Thousand Island dressing.&nbsp;<\/li>\n<li>Heat olive oil in frying pan and saute the cabbage. Season to taste with salt, pepper, and a little caraway seed if desired.<\/li>\n<li>When cabbage is starting to wilt, add corned beef and cook 1-2 minutes more.&nbsp;<\/li>\n<li>Let cool a few minutes and stir in Thousand Island Dressing.&nbsp;<\/li>\n<li>I used a deep casserole dish so you could see the layers, but any glass or crockery casserole dish that&#8217;s not too small will work.<\/li>\n<li>Make a layer with half the mashed cauliflower.&nbsp;<\/li>\n<li>Put the cabbage\/corned beef mixture over that.
