My sister Val has the tradition of making quiche for Christmas morning, and this crustless quiche would definitely be a fun Christmas breakfast for families who are watching carbs!<\/p>\n<p style=\"text-align: justify;\">I learned to love Quiche Lorraine when I worked part-time during college at a charming (and long-gone) Salt Lake City French restaurant called Le Parisien. You may have had that famous and traditional French quiche with a flaky pastry crust filled with custard that contains bacon, onions, and cheese. Of course that&#8217;s a tasty dish, but I think my crustless Quiche Lorraine is just as delicious.<\/p>\n<p style=\"text-align: justify;\">And in case anyone is wondering how this crustless quiche recipe differs from my usual <a href=\"https:\/\/kalynskitchen.com\/2006\/01\/breakfast-casserole-many-wayswho-knew.html\">low-carb breakfast casseroles<\/a> other than the obvious use of a round dish, it&#8217;s the step of mixing a generous amount of half and half into the eggs to create more of a custard consistency. And of course a lot of the good flavor in this crustless quiche comes from using bacon, grated Swiss cheese, Mozzarella, and Parmesan for rich flavor. Spray a 9-10 inch pie dish with nonstick spray.<\/li><li data-step-index=\"1\" id=\"mv_create_164_2\">Cook bacon using your preferred method until it's very crisp; then blot away as much fat as you can and crumble the bacon. (I used Costco pre-cooked bacon which I cooked in the microwave for 1 minute and then blotted the fat.)<\/li><li data-step-index=\"2\" id=\"mv_create_164_3\">Slice green onions and grate cheese if you need to.<\/li><li data-step-index=\"3\" id=\"mv_create_164_4\">In the pie dish layer the bacon, green onions, Swiss cheese, Mozzarella cheese, and Parmesan cheese. Season with ground pepper, Spike Seasoning, and Cayenne Pepper.<\/li><li data-step-index=\"4\" id=\"mv_create_164_5\">Beat the eggs until yolks and whites are completely combined, then whisk in the half and half.<\/li><li data-step-index=\"5\" id=\"mv_create_164_6\">Pour the egg mixture over the other ingredients; then use a fork to gently stir so all ingredients are combined.<\/li><li data-step-index=\"6\" id=\"mv_create_164_7\">Bake 45 minutes or until the center is firm and the top is browned to your liking.
