And Thanksgiving is coming, so I&#8217;m reminding you about it for today&#8217;s <a href=\"https:\/\/kalynskitchen.com\/category\/recipes\/friday-favorites\/\">Friday Favorites<\/a> pick. For a long time I wasn&#8217;t a fan of pumpkin pie. Then I posted a recipe for <a href=\"https:\/\/kalynskitchen.com\/pumpkin-cheesecake-with-less-sugar-for\/\">Sugar-Free Layered Pumpkin Cheesecake<\/a> that I really liked, and I made that a few years for Thanksgiving.<\/p>\n<p style=\"text-align: justify;\">Then I got the urge to try something slightly different, and came up with this pumpkin cheesecake pie that&#8217;s halfway between pumpkin pie and pumpkin cheesecake. It has more pumpkin than the cheesecake recipe, and the texture is a little closer to pumpkin pie, while still having that creamy mouth feel of cheesecake.<\/p>\n<p style=\"text-align: justify;\">For years I made a <a href=\"https:\/\/kalynskitchen.com\/low-sugar-pumpkin-cheesecake-pie\/\">low-sugar version<\/a> of this recipe made in a graham cracker crust. (Use that link to see the original recipe if you were a fan.) Then I decided to try making the pumpkin cheesecake pie into a sugar-free recipe by baking it in a springform pan without the crust! And what a great experiment that turned out to be.<\/p>\n<p><!--more--><\/p>\n<p style=\"text-align: justify;\">I use Monkfruit Sweetener or Golden Monkfruit Sweetener for this recipe, but after testing the new version a few times I slightly reduced the amount of sweetener and added a bit of almond flour for a more &#8220;pumpkin pie&#8221; texture. I also switched out the Apple Pie Spice for Pumpkin Pie Spice, but either will work.<\/p>\n<p style=\"text-align: justify;\">I baked this new version at a slightly higher temperature too for a firmer pie when it didn&#8217;t have a crust. When the the cake or cheesecake is done you can remove the outer ring to get a dessert that&#8217;s easier to cut and serve.<\/p>\n<h2>Can the Sugar-Free Pumpkin Cheesecake Pie be made ahead?<\/h2>\n<p style=\"text-align: justify;\">This dessert needs a minimum of 4 hours chilling time, but it will benefit from being chilled overnight. That makes it perfect to bake the day before a big holiday meal!<\/p>\n<h2>How did I make the pumpkin cheesecake pie recipe lower in carbs?<\/h2>\n<p style=\"text-align: justify;\">The original version of this recipe didn&#8217;t have added sugar but it used a purchased graham cracker crust, and that <a href=\"https:\/\/kalynskitchen.com\/low-sugar-pumpkin-cheesecake-pie\/\">low-sugar version<\/a> has 29 net carbs. This new sugar-free version that&#8217;s baked in a springform pan without a crust has only 6.3 net carbs per serving and 8.1 grams of protein! (I recently realized my nutritional calculator was calculating Monkfruit sweetener incorrectly, so that has been corrected.
