And personally I never get tired of arugula, and I think salads that include pine nuts are always a treat!<\/i><\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/www.pinterest.com\/pin\/187603140724576371\/\" target=\"_blank\" rel=\"noopener\">PIN the Baby Arugula Salad to make it later!<\/a><\/p>\n<p><img decoding=\"async\" class=\"aligncenter wp-image-24585\" src=\"https:\/\/kalynskitchen.com\/wp-content\/uploads\/2017\/03\/2-550-kalyns-favorite-baby-arugula-salad.jpg\" alt=\"\" width=\"650\" height=\"975\"><\/p>\n<p style=\"text-align: justify;\"><b>Baby Arugula Salad<\/b> is a recipe I came up with when I noticed salads with baby arugula, lemon, and Parmesan showing up on the menu at several of my favorite restaurants. And I&#8217;m a huge fan of arugula, so I happily sampled the arugula salads everywhere I saw one. Then I decided to try to make and write down a recipe for this type of salad, And it did take a little experimenting to create this perfect arugula salad that made my tastebuds completely happy.<\/p>\n<p style=\"text-align: justify;\">And now this version (with just a touch of white balsamic vinegar added to the lemony dressing) is the Baby Arugula Salad I happily make over and over. Sometimes I&#8217;ll bring home one of those 5 oz. tubs of baby arugula, make this salad for lunch, eat half, and then eat the leftovers with my dinner, it&#8217;s that good! And I have made this many times for dinner guests as well. It&#8217;s used a lot in leafy green mixes and can be eaten raw or cooked. I love the strong flavor of this, but it&#8217;s probably an acquired taste for most people.<\/p>\n<h2>About ingredients for the Baby Arugula Salad:<\/h2>\n<p style=\"text-align: justify;\">I try not to be an ingredients snob, but this is a recipe where using the best quality ingredients really does make a difference. Organic baby arugula may be a bit more expensive, but it has the best flavor. I&#8217;d also use the highest quality extra virgin olive oil and Parmesan cheese I could find. I season the dressing with sea salt and fresh ground black pepper, not just regular salt and pepper. If you need to save money on one ingredient here, I think toasted slivered almonds would be a tasty replacement for the pine nuts for a less expensive variation.<\/p>\n<h2 style=\"text-align: justify;\">Why I use baby arugula for this salad:<\/h2>\n<p style=\"text-align: justify;\">Baby Arugula is just the smaller leaves of arugula that are harvested sooner, and they tend to be a bit milder than more mature arugula and also have shorter softer stems. (or almonds) into a dry pan and toast over high heat until they are just starting to color and become fragrant, watching very carefully so they don\u2019t burn.<\/li><li data-step-index=\"1\" id=\"mv_create_252_2\">Mix together the lemon juice\u00a0(I use my\u00a0<a href=\"https:\/\/kalynskitchen.com\/2009\/04\/freezing-fresh-lemon-juice-and-lime.html\">fresh-frozen lemon juice<\/a>) and balsamic vinegar; then whisk in 3 T of extra-virgin olive oil, one tablespoon at a time.<\/li><li data-step-index=\"2\" id=\"mv_create_252_3\">Taste the dressing to see if you want to add a little more oil and if so, whisk it in.<\/li><li data-step-index=\"3\" id=\"mv_create_252_4\">Season the dressing with sea salt and freshly ground black pepper.<\/li><li data-step-index=\"4\" id=\"mv_create_252_5\">Grate the parmesan cheese (such as\u00a0<a href=\"http:\/\/en.wikipedia.org\/wiki\/Parmigiano-Reggiano\">Parmigiano Reggiano<\/a>), using medium or large side of the grater.<\/li><li data-step-index=\"5\" id=\"mv_create_252_6\">Wash baby arugula if needed and spin dry or dry with paper towels. It usually comes pre-washed but if it's wilted I would soak in cold water in a <a href=\"http:\/\/amzn.to\/2frHi5r\" rel=\"noopener\">salad spinner<\/a> (affiliate link).<\/li><li data-step-index=\"6\" id=\"mv_create_252_7\">Put arugula in a large bowl and toss with just enough dressing to coat all the leaves.
