And even you&#8217;ve never thought about making a breakfast that included summer squash, I promise this is a delicious idea.<\/p>\n<p style=\"text-align: justify;\">These crustless low-carb breakfast tarts are actually like a little mini quiche that&#8217;s baked in a tart pan, and they have lots of zucchini with eggs, goat cheese, and a generous amount of coarsely grated sharp white cheddar. For sure there&#8217;s lots of cheesy flavor in every bite!<\/p>\n<p style=\"text-align: justify;\">And there&#8217;s no doubt that this zucchini tart would make a great <a href=\"https:\/\/kalynskitchen.com\/low-carb-keto-grab-go-breakfasts\/\">grab-and-go breakfast<\/a> for busy days when there&#8217;s no time to cook in the morning, but I also think this is a tasty way to eat zucchini any time of day. But some people definitely might consider this a mini quiche recipe where ingredients are combined and then baked; call them whatever you prefer!<\/p>\n<h2>What Tart Pan Did I Use for the Zucchini Tarts?<\/h2>\n<p style=\"text-align: justify;\">This is another&nbsp; recipe where I used my <a href=\"https:\/\/amzn.to\/3jH2eo2\" target=\"_blank\" rel=\"noopener\">Mini Tart Pan<\/a> (affiliate link), and I do love this pan so much! &nbsp;But if you don&#8217;t want to buy a special pan just to make breakfast tarts, use <a href=\"https:\/\/kalynskitchen.com\/2008\/10\/kalyns-kitchen-picks-individual.html\" target=\"_blank\" rel=\"noopener noreferrer\">large silicone baking cups<\/a> (affiliate link), gratin dishes, or even a large muffin pan. Crumbled goat cheese and let it come to room temperature.<\/li>\n<li>Slice the zucchini lengthwise into fourths: then cut it into small pieces.<\/li>\n<li>Heat olive oil in a non-stick frying pan, add zucchini, sprinkle with dried oregano, dried basil, <a href=\"https:\/\/amzn.to\/2PyFkCq\" target=\"_blank\" rel=\"noopener noreferrer\">Spike Seasoning<\/a> (affiliate link) or another all-purpose seasoning blend, and a little salt and pepper.<\/li>\n<li>Cook zucchini a few minutes over medium-high heat, just until it&#8217;s barely starting to soften.<\/li>\n<li>Spray <a href=\"https:\/\/amzn.to\/3jH2eo2\" target=\"_blank\" rel=\"noopener\">Mini Tart Pan<\/a> (affiliate link) with olive oil or non-stick spray and divide the cooked zucchini among the tart wells.<\/li>\n<li>Top with coarsely grated sharp cheddar and green onions.<\/li>\n<li>Use a fork to stir softened goat cheese cheese and add the the half and half or milk a little at a time until it&#8217;s mostly blended with cream cheese.<\/li>\n<li>Beat eggs in another bowl (oops, no photo of the eggs) and add to the goat cheese\/milk mixture a little at a time, stirring each time you add more egg so the mixture is well-blended.<\/li>\n<li>Fill each tart well with goat-cheese and egg mixture.<\/li>\n<li>I like to use a fork and gently stir so ingredients are evenly distributed.<\/li>\n<li>Bake about 30 minutes, or until they&#8217;re firm and lightly browned.<\/li>\n<li>Serve the Zucchini Tarts hot. Then add zucchini, sprinkle with dried oregano, dried basil, Spike Seasoning or other all-purpose seasoning, and a little salt and pepper.<\/li><li data-step-index=\"4\" id=\"mv_create_785_5\">Cook the zucchini a few minutes over medium-high heat, just until it&rsquo;s barely starting to soften.<\/li><li data-step-index=\"5\" id=\"mv_create_785_6\">Spray the <a href=\"https:\/\/amzn.to\/3jH2eo2\">Mini Tart Pan<\/a> (affiliate link) with olive oil or a little non-stick spray and divide the cooked zucchini among the tart wells.<\/li><li data-step-index=\"6\" id=\"mv_create_785_7\">Top with a generous tablespoon of coarsely grated sharp cheddar and a pinch of green onions.<\/li><li data-step-index=\"7\" id=\"mv_create_785_8\">Then use a fork to stir the now-softened goat cheese and add the the half and half or milk a little at a time until goat cheese and milk is mostly blended.<\/li><li data-step-index=\"8\" id=\"mv_create_785_9\">Beat eggs in another bowl and add to the goat cheese\/milk mixture a little at a time, stirring each time you add more so the mixture is well-blended.<\/li><li data-step-index=\"9\" id=\"mv_create_785_10\">Fill each tart well with the goat-cheese and egg mixture, being careful not to fill too full.<\/li><li data-step-index=\"10\" id=\"mv_create_785_11\">I like to use a fork and gently stir so the other ingredients are evenly distributed in the egg.<\/li><li data-step-index=\"11\" id=\"mv_create_785_12\">Bake about 30 minutes, or until tarts are firm and lightly browned<\/li><li data-step-index=\"12\" id=\"mv_create_785_13\">Serve the Zucchini Tarts hot.<\/li><\/ol>\t<\/div>\n\t<div class=\"mv-create-notes mv-create-notes-slot-v2\">\n\t\t<h3 class=\"mv-create-notes-title mv-create-title-secondary\">Notes<\/h3>\n\t\t<div class=\"mv-create-notes-content\">\n\t\t\t<p><p>I'm a huge fan of <a href=\"https:\/\/amzn.to\/2PyFkCq\" target=\"_blank\" rel=\"noopener noreferrer\">Spike Seasoning<\/a> (affiliate link), but\u00a0if you don\u2019t have Spike you can use any all-purpose seasoning blend that\u2019s good in eggs.
