Not sure why you had too much liquid if you reduced the sauce, maybe your chicken breasts were a lot smaller. Glad you were able to make it work.

We had to drain the meat before serving. No tortillas could hold up to the amount of liquid going on here. A can of enchilada sauce for a 13X9 pan of enchiladas is probably right since enchiladas are supposed to be runny. But that much for tacos? Nope. I’m thinking half a can, reduced, and even that might be pushing it. However…. // We plan to repeat the process, but toss in a bunch of veg to make a stew or soup. The flavours were wonderful, but the amount of liquid is simply all wrong for tacos, at least with the slow cooker. I’m not even sure it wouldn’t be too runny if cooked in the instant pot or on the stove. But for some soup, it would be fantastic!

I’ve noticed that some stores in the U.S. call these Pasilla Peppers. I apologize that i forgot to mention that! If your store still doesn’t have them I think any mild pepper would work, but hotter peppers (like Jalanenos) would be much hotter than the Poblanos. You could definitely leave out the pepper too.
