Bacon Frittata with Two Cheeses is going to be a hit with anyone who loves bacon and cheese! We used a combination of grated Mozzarella and Goat Cheese, for plenty of cheesy flavor. And this is wonderful to make for a special breakfast, and it’s perfect to make on the weekend, so I’m reminding you about it for this week’s Friday Favorites pick!!

I first made this frittata recipe with Canadian bacon which is tasty and low in carbs. But through the years I’ve been making it more often with thick-sliced bacon, which is what I used for the updated photos. I do hope you don’t skimp on the cheese or skip the green onions though; those ingredients added so much flavor to the Bacon Frittata. This amazingly delicious Grilled Chicken with Balsamic Vinegar is the recipe I’m reminding you about for this week’s Friday Favorites pick! And many years ago when I was the teacher’s association president I made this chicken for a district insurance committee meeting. People loved it, and then several years later I saw someone who had eaten it that day and she asked me for the recipe!

If you serve a recipe and someone still remembers it years later, you know it’s a very good recipe, right? This balsamic grilled chicken recipe is still a hit every time I make it. And grilling season is finally here again, which always makes me happy!

This recipe makes enough marinade for eight chicken breasts, making it perfect to make for guests. I encourage you to make the full amount if that works in your household, because leftover chicken is tasty served over salad or tossed into a stir-fry. But even if you opt not to make the full amount, I’m urging you to try this recipe for grilled chicken flavored with balsamic vinegar right away!

Instant Pot Teriyaki Chicken is a recipe that was inspired by some cooking experiences from my past! Years ago I learned to make Teriyaki Chicken from a friend who had lived in Hawaii and gotten the recipe there. And that Teriyaki Chicken recipe was delicious (but loaded with sugar) so in the early days of the blog I adapted it into a version of Baked Teriyaki Chicken that was Sugar-Free, replacing the sugar with a low-carb Sweetener.

Kara and I looked at recipes around the web when we decided to try making this favorite chicken dish in the Instant Pot. But it was the perfect easy 5-ingredient sugar-free sauce from that earlier recipe that mostly inspired the Instant Pot Teriyaki Chicken we came up with!

This flavorful chicken only needs four minutes under pressure; then we removed the strips of chicken and broke it apart into chunks while we simmered the sauce. We did thicken the sauce with a teeny-tiny bit of cornstarch, but this is still very low in carbs! If you like Teriyaki flavors, I hope you try it soon.

This delicious No-Bake Cherry Cheesecake is from a post in the early days of my blog that originally had two recipes. And I love both of the low-carb cheesecakes that were featured together for a blogging event. Now I’m happy to have them in separate posts, which I think will be less confusing.

When we tested this recipe, Kara and I really enjoyed the no-bake cheesecake with no-sugar-added cherry topping. Kara took some home, and that topping was also a hit with her kids. But the cheesecakes would also be delicious topped with fresh berries or other fresh fruit of your choice.

I hope you will try this recipe when you need an easy treat for a special occasion! And it’s perfect for Mother’s Day, or for the warmer weather coming up.

This Strawberry Spinach Salad is a recipe I originally got from a reader named Robin Oliver, and it’s been a favorite on the site through the years. And I’m reminding you about it today because I think this would be perfect for Mother’s Day!

I no longer have a garden where dill is growing. But I’m still intrigued with the idea of dill in a strawberry and spinach salad, and I didn’t mind buying a little package of fresh dill at the store. This salad also has a delightful slightly-sweet dressing with a touch of dry mustard and onion powder giving it a sweet and savory combination of flavors.

I used my favorite sweetener of course, to make my Strawberry Spinach Salad lower in sugar, and when we tasted the dressing using Monkfruit sweetener we decided some people might like to make it even slightly sweeter, so I’m giving you that option..

If you don’t like dill, or don’t have any fresh dill in your garden I think this salad would also be delicious with chopped sweet basil! This is a lovely salad for a special occasion; hope you enjoy!

These Low-Carb Chicken Enchiladas are a favorite recipe I’m reminding you about for Friday Favorites this week. I bet this is a Mexican dinner you’re going to love! And recently I discovered the nutritional calculator I first used didn’t always calculated the carbs correctly for low-carb tortillas. So these enchiladas are even lower in carbs than I first thought!

This is one of those Denny Family Recipes that has good memories for me. Years ago my nephew Jake and I made a canned soup version of Green Chile Chicken Enchiladas when I was visiting my sister and her family. Of course that was delicious, but loaded with carbs!

Fast forward to when Jake had moved to Salt Lake and was coming to cook with me every other week, and we decided to create a low-carb version of chicken enchiladas to share on Kalyn’s Kitchen. And after quite a few tries we ended up with this delicious recipe. And if you’re looking for something to make for Cinco de Mayo in a few weeks, this will be just the thing!

When I was a kid I loved my mom’s tacos. Mom would fry corn tortillas to make shells. Then she folded them over to be filled with spicy taco meat, grated cheese, lettuce, hot sauce, and sometimes tomatoes. When we ate mom’s tacos, we had to hold them over a plate because so much grease would drip out!

Ground Beef Tacos with Tomato-Avocado Salsa is a different version of ground beef tacos! These days I make tacos into a low-carb meal by using low-carb flour tortillas. I season the ground beef with my homemade taco seasoning and serve the tacos with a tomato-avocado salsa (with cucumber!)

The tacos you see here are an updated version of Spicy Ground Beef and Black Beans Tacos I first made years ago! But these days a lot of my readers don’t want beans in their taco meat. (If you do want the black beans, follow that link and see the original recipe.)

And Cinco de Mayo is less than two weeks away, and these tacos would be a perfect dinner for that! You can make the ground beef tacos even if you don’t have every ingredient. We doubled the meat, so  you can probably have tacos for dinner more than once. And keep reading to find out about the frozen avocado that we used in the salsa for these tacos!

Cottage Cheese Pasta Bake with Mushrooms is a vegetarian pasta casserole that’s loaded with creamy goodness from plenty of cottage cheese and Mozzarella cheese! And I know warmer weather is coming, so I’m happy to share it with you before casserole season turns into salad season.

Kara and I loved this recipe, even though the final results were not overly photogenic. But the combination of pasta, mushrooms, flavorful Rao’s pasta sauce, dried herbs, cottage cheese, Mozzarella cheese, and Parmesan Cheese was such a winner.

Strawberries Romanoff is one of my memories from working at Le Parisien Restaurant in Salt Lake City, and I’ve loved this recipe for years! I make this for an amazing and ridiculously easy dessert whenever fresh strawberries are in season!

Strawberries Romanoff is a favorite dessert I can’t stop thinking about when ripe juicy strawberries show up at the grocery store! This is an ultra easy recipe that I learned to make when I worked at a long-gone French restaurant in Salt Lake called Le Parisien. The restaurant closed in 2001, but I have great memories of working there while I was in collage, and Strawberries Romanoff was one of their signature desserts.

Le Parisien served the strawberries with small bowls of sour cream and brown sugar, and to eat it you’d dip a strawberry into the sour cream and then into the brown sugar. But I developed a preference for whisking brown sugar and sour cream together and mixing it with the cut strawberries! And this perfect easy dessert with only three ingredients is something I’ve made many times for guests, and it’s always a hit.

Now that I’m not eating much sugar, I make this with sour cream and Golden Monkfruit Sweetener which still gives it amazing brown sugar flavor! And if you’re looking for an easy dessert for Easter, this is as easy as it gets. I hope you make some Strawberries Romanoff soon, while ripe juicy strawberries are so good!

These amazing Low-Carb High-Fiber Savory Muffins are my Friday Favorites pick this week, and this is a delicious muffin that’s perfect any time of day! My niece Kara and I tested these muffins quite a few times to perfect this recipe that’s a combination of ingredients from other muffins that we’ve enjoyed.

Kara and I both thought these low-carb savory muffins tasted a bit like garlic bread, so they would be perfect to serve with soup for dinner. But I’m loving these muffins for a quick breakfast option too. And I’m pretty sure everyone who likes the idea of a savory high fiber breakfast muffin is going to enjoy this recipe.

I like to make a batch of these muffins, freeze in a Ziploc bag, and then take one out and reheat in the microwave for one minute. And I do love to eat them spread with a little butter, but that’s up to you. I hope you try this recipe soon if you like the idea of muffins that are low in carbs, Keto, high in fiber, high in protein, grain-free, gluten-free, and vegetarian.
