Chicken and Avocado Salad with Lime and Cilantro was inspired by a recipe my sister Pam discovered on Pinterest! And my version of this tasty salad is a recipe I’ve made over and over since Pam first told me about it. She sent me an e-mail that had just a list of ingredients. So I worked on the salad and made up my own amounts and directions!

My version of this favorite salad has chunks of chicken and avocado, and I mix the lime and mayonnaise to make a dressing. And my family has some cilantro avoiders, so I often make an equally-delicious version without cilantro. Through the years I’ve made this chicken and avocado salad for so many parties. And if you like these ingredients, I bet this salad is going to be a keeper for you too!

The salad became so popular on the site that a few years ago I decided I should improve the photos. I also realized now I usually make a slightly larger amount than the original recipe. So this recipe is the new-and-improved version of this chicken and avocado salad, with slightly more chicken, avocado, and cilantro than the original version. Feel free to adjust ingredients and amounts any way that suits your fancy! And I think this combination will be good no matter how you switch it up!

Today I’m reminding you about this amazing Chicken Salad with Basil! This is a recipe you should make as soon as you see basil plants showing up in the grocery store. OR if you have basil growing in your garden, you can make it it all summer long! 

I’m a huge fan of fresh basil, and I’ve been growing basil and freezing the basil for many years, so I’m excited when basil season gets started every year. And this basil-loaded chicken salad recipe is one of my favorite summer salads. Through the years I’ve decided you just can’t ever put too much chopped basil in this salad.

And yes, I used the word SUMMER, but please don’t hesitate to make this salad any time you have chicken and fresh basil on hand! If you have to buy basil in the grocery store you can get away with using less in this recipe. But please try it if you’re a fan of these flavors. I could eat this over and over again and never get tired of it!

This colorful Arugula Salad with Goat Cheese also has artichoke hearts and sweet mini-peppers, and this is a combination I absolutely love. And we’re entering into the time of year when nothing seems better than salad as a tasty side dish for something cooked on the grill! I love salads of every kind, something that’s probably obvious if you follow my blog.

And long-time readers might have noticed my fondness for the peppery greens called Arugula. I know some people aren’t really fans, but I love the sharp spicy flavor and those clamshells of arugula find their way into my grocery cart quite often. I’ve been making fun salad combinations with arugula since the very early days of my blog!

And this favorite arugula salad has goat cheese, which is one of my other favorite ingredients! If you’re also a fan, be generous with the goat cheese like we were when we took these photos, and I bet you’ll love it!

This Asparagus with Soy-Sesame Glaze is perfect for spring when asparagus is in season but it’s still cool enough to use the oven. And this is an asparagus side dish that I’ve made over and over!

For this asparagus cooked on a sheet pan, I kept the asparagus spears whole and used a pastry brush to glaze them with the soy-sesame mixture for the last part of the cooking time. Then sprinkle some toasted sesame seeds on, and you have the most amazing soy sauce and asparagus dish you could ever want!

These amazing Air Fryer Artichoke Hearts are a fun, delicious, and low-carb appetizer that I’m recommending for my Friday Favorites pick this week. And this treat with artichokes is easy to make and perfect for any type of special meal. I promise everyone who likes artichokes will love this easy idea.

And making roasted artichoke hearts couldn’t be easier with the Air Fryer! They’re simply drained, coated with olive oil, seasoned, roasted in the Air Fryer, and topped with coarsely grated Parmesan cheese. You can eat them dipped into something tasty if you like, but truthfully they don’t need a dip to taste great.

Of course, I love artichokes so I’d love this as a side dish for a special dinner too. We used two cans of whole artichoke hearts to make 8 appetizer servings or 4 side dish servings, but you can cut the recipe in half if you don’t want that much. I know canned artichokes are a bit of a budget splurge, but I hope you try this when you’re wanting an extra-special idea for an appetizer!

Strawberries Romanoff is one of my memories from working at Le Parisien Restaurant in Salt Lake City, and I’ve loved this recipe for years! I make this for an amazing and ridiculously easy dessert whenever fresh strawberries are in season!

Strawberries Romanoff is a favorite dessert I can’t stop thinking about when ripe juicy strawberries show up at the grocery store! This is an ultra easy recipe that I learned to make when I worked at a long-gone French restaurant in Salt Lake called Le Parisien. The restaurant closed in 2001, but I have great memories of working there while I was in collage, and Strawberries Romanoff was one of their signature desserts.

Le Parisien served the strawberries with small bowls of sour cream and brown sugar, and to eat it you’d dip a strawberry into the sour cream and then into the brown sugar. But I developed a preference for whisking brown sugar and sour cream together and mixing it with the cut strawberries! And this perfect easy dessert with only three ingredients is something I’ve made many times for guests, and it’s always a hit.

Now that I’m not eating much sugar, I make this with sour cream and Golden Monkfruit Sweetener which still gives it amazing brown sugar flavor! And if you’re looking for an easy dessert for Easter, this is as easy as it gets. I hope you make some Strawberries Romanoff soon, while ripe juicy strawberries are so good!

This recipe for Steamed Artichokes (with Artichoke Dipping Sauce) is a favorite childhood memory for me! My mother made artichokes for our family every spring, and from a young age I was such a fan of Mom’s artichokes and the artichoke dipping sauce she served them with! It wasn’t until I was an adult that I realized some people didn’t eat fresh artichokes, and had no idea how to cook them.

These Steamed Artichokes and the easy Artichoke Dipping Sauce is only one of the memories that makes me miss my amazing mother. She was cooking for a family of 12 (!), which is one reason she always cut each artichoke in half to make it serve two people. Now many years later, I still love this way of preparing the artichokes that makes them easier to eat.

Mom steamed the artichokes in a big pot, and I’ll show you how to cook them in a vegetable steamer. My mom made artichokes once or twice every spring as a side dish for a special occasion. So today I’m featuring this recipe as a Friday Favorites pick to remind you about artichokes as an option for Easter! And happy First Day of Spring everyone!

This popular Fried Cabbage with Bacon is one of the easiest and tastiest recipes I know to make with cabbage! And I always share recipes with cabbage during March when cabbage goes on sale. but I also think cabbage is a perfect low-carb ingredient any time of year! So today I’m reminding you about this tasty dinner idea for Friday Favorites, and urging you to make it for an easy dinner!

And this cabbage fried with bacon is so quick and easy you barely need a recipe. Just fry some bacon (more or less, depending on how you feel about bacon.) Leave a little bacon fat in the pan and fry the chopped cabbage. Then add the bacon back in and cook a little more. Season the finished dish with salt and fresh-ground black pepper (and a pinch of red pepper flakes if desired).

Before you know it you’re eating a delicious dish of fried cabbage and tasty bacon! Just be sure to use a big pan so the cabbage isn’t crowded, because no one wants steamed cabbage when it’s supposed to be fried! And if you’re a fan of these ingredients I hope you make this soon.

This Kale and Feta Breakfast Casserole has been one of my favorite combinations for quite a few years now. And low-carb breakfast casseroles are something I make all year, whenever the weather is cool enough to use the oven. So a few years ago when I had a big bag of kale in the fridge, I decided to give this recipe a much-needed photo update!

Kale is a vegetable I didn’t have much appreciation for until I grew it myself in the garden. But now I love this ultra-nutritious type of dark leafy greens. And Kale is available all year, and it’s so versatile to use in recipes!
