Glad you are enjoying the recipes! The ingredients adding sodium here are ham, chicken stock or broth, and ham flavor base. I think you could use less ham, use low-sodium chicken broth, and/or omit the ham flavor base or use less. Any of those changes would make it lower in sodium.

I’m sure it *can* be cooked in a crockpot, but I haven’t ever done it that way so I wouldn’t be able to tell you exactly how to do it. And I think cooking the onions and celery with the ham is an essential step for adding flavor, so I wouldn’t skip that.

If you wanted to do that on the stove and then do the remaining part of the cooking in the slow cooker, I would use HIGH heat, and don’t add any water for slow cooker cooking. I would still cook for about an hour, then add the collard greens and cook until they’re soft, then process some of the soup as in the recipe above.

Cooking on the stove does evaporate some of the liquid, so you might want to start with slightly less liquid if you use a slow cooker.
