I have not tried this with Oat Flour as opposed to ground rolled oats. And I’m not familiar with oat flour so I asked Google this query, “how much oat flour will equal 1/2 cup ground rolled oats?”

This is the answer I got “1/2 cup of ground rolled oats is generally equivalent to approximately 1/3 cup to a scant 1/2 cup of packed oat flour. While many sources suggest a 1:1 ratio for blending, the volume often shrinks by about 25% when ground finely.”

That confirms what we got when we measured the rolled oats after we ground them. So I am guessing 1/3 cup oat flour will work fine but it is really only a guess, since I haven’t used oat flour. I’d love to hear how that works for you.

I get that but oatmeal is a standard ingredient in Ranger Cookies.

Most of my cookies don’t have anything like oatmeal, just search “low-carb cookies” on the site to see other options.

Still were very sweet.
Next time I will melt the butter beat in sweetener. I added the almond flour mixture and beat that all together. Last folded in the pecan mixture.

I can’t say for sure; I definitely haven’t done it that way. But if you let the dough come to room temperature before you bake I’m guessing it might work.
