I haven’t tried that and I do think it will be a little hard to get all the ingredients mixed well without some type of mixer. But if you make sure the butter is really soft, it might be worth a try. I’d love to hear how it goes if you try it.

Sorry to hear that. I think some people are sensitive to erythritol which is used with Monkfruit because the natural monkfruit is to sweet to be used alone.

I wish I could help you, but there is no way for me to know what sweeteners will taste good to you and also work for him. And I also don’t want to recommend sweeteners I haven’t ever tested with the recipe.

That said, I am guessing that most sweeteners that measure 1:1 like sugar will work in this recipe so if you have a sweetener you like it would be worth a try. If you’re looking for a sweetener you haven’t tried, I would pick one without erythritol/
