I am not able to do that because I didn’t weigh or measure the zucchini, but I would guess it would be about 1 1/2 cups for the small zucchinis I used. A little more won’t hurt.

I wouldn’t recommend freezing for this recipe, but they will keep well in the fridge for at least a week, and can be reheated in the microwave.
