I’m glad you enjoyed the dish you ended up with. But I can’t imagine Halloumi breaking apart. True Halloumi is a very rubbery cheese that completely holds its shape.

The mushrooms broke too! I decided to do the next best thing – roast everything. I had also cut up mini peppers with the onion and mushrooms, so I poured the entire marinated mix onto the sheet pan and roasted. I waited to put the cheese on top of some of the veggies and roasted for 10 more minutes. It’s delishous!!!

If you have double skewers like I used or blade-type skewers those will work best. Don’t know what else to do about that, sorry. The Halloumi I have is very firm and holds together well, but maybe different brands are more crumbly. Sorry you’re having problems. I’d probably just grill the Halloumi in a pan if that happened to me.
