Spike is such a complex blend with so many ingredients, it is impossible to pick one primary flavor. But it’s an all purpose seasoning blend and any all-purpose seasoning blend will be fine. I can’t recommend a specific one since I have used Spike for about 40 years!

Mrs. L., you can use any type of cheese. Also there are other options in the recipe archives with different cheese. One of my favorites is broccoli with cheddar cheese.
