Sorry this was not a hit for you. You can see from the comments that other people have enjoyed them.

There are so many variables that it’s hard for me to guess what went wrong:
–Were the silicone baking cups you used the same size as mine. (If so doubling the recipe would make 24 muffins.)
–Have you cooked with flaxseed meal before? I wonder if that’s the flavor you are not liking.
–Did you use all the ingredients I did in the same amounts other than less baking powder?

Really, without watching you make them it’s hard for me to say why you had different results than I did.

This is my 1st time commenting on any recipe ever. I made these the other day. I double the recipe but I thought 5 TBSP of baking powder was a lot so I stopped at 4. After double checking all the ingredient measurements I went to fill my silicone muffin cups. You say to start with 1/3 of the way full but I had to fill mine all the way up and I still had enough “dough” to fill 12 more cups to the top. They were ok and I am eating them because I hate to waste food, but they were a little dry and had a bit of an off taste. Any ideas why it made so much and where I went wrong? Thanks

I haven’t ever made this without flaxseed meal, and it makes up almost half the bulk of the dry ingredients, so I am hesitant to recommend a substitute. The only thing I can think of that *might* work would be hemp hearts, but as I said I haven’t tried it with anything else.

I’m not familiar with dry cottage cheese, but since the recipes rinses the cottage cheese to leave the curds, I am guessing it would probably work.
