I’m glad you enjoyed it. I do like the poblanos to be fairly firm but your proposed method sounds like a good idea if you prefer them softer.

That might work, but since I’m stuffing the peppers raw, that will affect the timing for the recipe. Personally I prefer raw peppers for stuffed peppers in general so the finished dish still has a slight crunch to the peppers. I’d love to hear how it works if you try it.

This was my first time cooking with Poblano peppers, but definitely won’t be the last! The only tweak I made to the recipe was using ground chicken instead of ground turkey. I’ve found that ground chicken often holds flavors better and we prefer the cooked texture of ground chicken in recipes like these over turkey. We will definitely be adding this to our rotation!

*I had extra “filling” leftover that I saved and used the next morning in an egg scramble and it was also fantastic!

Interesting, I wonder if your poblano was especially hot. I haven’t ever had that problem with them. Glad you liked the flavors though.
