In reply to Paula. Simmering the sauce concentrates the flavor, which I think improves the flavor of the finished dish. But it might not be bad just using half as much sauce. Let me know if you try it!

I usually don’t have a lot of time to prepare recipes. Is it possible to use half the can of enchilada sauce?

In reply to Marilyn. Glad you enjoyed. When we test the recipes my niece Kara and I cut them casserole into servings so it's definitely not a scientific measure. But we made eight servings from this. Of course people can cut it however they prefer.

Did really enjoy this recipe with just a few modifications. However unless you’re feeding dickie birds or very small children, I find the portion recommendation totally off. I think serving 6 far more realistic. Unless of course this is meant as a side and not a main course. Otherwise, delicious.
